Colour is an important quality parameter for paste-like dairy products such as yoghurt, quark, cream cheese, spreadable fats, crème fraîche, sour cream and ice cream. Whether as a natural variant or with the addition of fruit products – the colour palette is an important part of the development process. In production, the colour measurement is then used for quality control. HunterLab offers the right colour measurement solution to meet the quality standards according to visual perception.
The task
The milk products described above are pasty substances and must be filled into a suitable container for colour measurement.
Colour measurement of yoghurt, simple and precise with the ColorFlex EZ.
The solution
HunterLab recommends the ColorFlex EZ spectrophotometer and the use of a special 64 mm optical glass cuvette for measuring the colour of pasty dairy products. By measuring the sample from below through the bottom of the glass, you have a perfectly flat measuring surface. The cuvette aperture of the ColorFlex EZ also ensures that the cuvette is always positioned centrally above the aperture. When sufficiently filled, these products are opaque and therefore independent of ambient light.
The measurement is very simple:
- Replace the standard aperture once with a cuvette aperture and standardize the device with it
- Fill the product into the cuvette
- Place the cuvette on the aperture
- Trigger measurement at the touch of a button
- Read off values
